What is Saffron?

Saffron, known scientifically as Crocus sativus, is a highly coveted spice derived from the dried stigmas of the saffron crocus flower. It boasts a rich golden color and a distinctive aroma and flavor, often described as slightly sweet, floral, and earthy. Originating from Greece or Southwest Asia, saffron has been prized for over three millennia in cooking, dyeing, and medicinal applications. It is revered not only for its ability to impart a vibrant color and unique flavor to dishes, ranging from risottos to sweets but also for its purported health benefits, including mood improvement and potential antioxidant properties. The labor-intensive harvesting process, where stigmas are handpicked from each flower, contributes to saffron’s status as one of the most expensive spices in the world.

Poushal Saffron is characterized by its longer strands with a red stigma and a yellowish tail. This type still has some of the yellow style attached to the red stigmas, offering a slightly lower potency compared to purer forms. It is known for its aromatic and coloring capabilities, commonly used in various dishes for both its flavor and color. Its distinct feature is the extended length of the stigma, which makes it visually appealing and a sign of good quality, though not as potent as the highest grades.

Sargol Saffron, often referred to as “cut saffron,” consists of the red stigma tips separated from the style. It is pure and contains no yellow or white parts, giving it a strong coloring strength and intense aroma. This makes it highly valued for its quality and concentration of flavor, fragrance, and dyeing properties. Sargol is typically more potent than Poushal and is considered one of the pure forms of saffron commonly available in the market.

Super Negin Saffron is the most superior grade and is an extension of Negin quality, featuring even longer, thicker, and more luxurious threads. It is the most expensive and potent type of saffron, distinguished by its full-bodied, bright red stigmas with high safranal and crocin content, leading to an intense aroma and powerful coloring capability. Super Negin is meticulously sorted and contains the longest and most robust stigmas, ensuring an unrivaled quality in flavor, aroma, and dyeing strength. This grade is highly sought after for gourmet cooking and prestigious culinary uses.
